Another hectic Monday! The entire morning was devoted to preparing my boss' powerpoint deck to support his presentation to a client, confirming travels and meetings, addressing operational questions in emails. In between that, I had to attend to endless calls plus proactively starting on project proposals (as I will be traveling this week to Newport, RI for a conference). I lost track of time and barely had time to run for coffee!
By 3:00pm, I was suffering from migraine and trying my best to concentrate while my boss speak about strategies! (he must think I am clueless as I have not participated - -so starving!) Super tired ... crazy hungry...and I need real food more than the power bars I'm munching the entire day! Of course, pasta is my answer to my big food dilemma! Quick, easy, loved by my wanna-be italian family and defintely will complement my newly discovered Australian wine. But who says a busy Monday will prevent me from blogging?
INGREDIENTS:
1 package Angel Hair pasta (cooked)
3-4 tbsp olive oil
onion
garlic
Sausage
capers
green bell pepper
salt
pepper
pesto sauce (optional)
garlic powder
basil leaves
Estimate cost : $6 -8 (Serves 5-6)
Saute garlic and onion in olive oil
STEP 2:
Add sausage until medium brown
STEP 3:
Add capers, green pepper
STEP 4:
Season with salt, pepper, garlic powder, basil leaves and pesto sauce
STEP 5:
Serve on top of angel hair pasta. (I tried adding feta cheese on top...its good!
