Today is one of those days that I am in and out of meeting rooms all day long. It's already Thursday and It still feels like a Monday to me as I have been going through one task after another.
I originally planned to leave early to go to Sears and purchase a new pair of eyeglasses but I ended up leaving late. So, combining the time spent on driving, going home to pick up G1, parking at the mall, choosing frames(disappointed to learned that the 2 for $99 promo applies to reading glasses only) and come back .... its already past six.
I was thinking of a simple waffle
dinner but changed my mind when I found these shells lurking in the pantry. So I thought, hmmm..mac n cheese, why not? It is a simple solution to a busy person like me who's already late for dinner and has an 8pm show to catch at Fox (Hell's Kitchen). But knowing that the dish can be regarded by the family as boring, I jazzed it up a la fine dining style and made adjustments to the basic pasta dish we love as a child.
INGREDIENTS:
1 box pasta shells
1/2 box (Quick Melt) Cheddar Cheese
4 tbsp butter
1/2 cup milk
1 egg
salt
pepper
ham slices
mozarella cheese
parsley
ESTIMATE COST:Between $8-12
STEP 1:
Cook pasta as instructed in label al dente style. Drain
STEP 2:
In medium heat, combine, cooked pasta, cheese, butter, egg, milk.
Season to taste with salt and pepper
STEP 3:
Add ham slices. Mix well until all cheese cubes are dissolved.
STEP 4:
Place in baking pan. Add mozzarella cheese on top
STEP 5:
Bake in the oven at 450 degrees for 20 minutes. Let stand for 5-10 minutes
STEP 6:
Garnish with parsley
