I usually grab ham slices in the deli as I know that this is an easy fix to adding diversity to our mixed green salad. So simple to make..mixed green, olive oil, some balsamic /honey mustard, salt and pepper, cut meat and you're good to go.
G1and G2 attended a movie party this afternoon ...so definitely tonight is a salad night (they are still in popcorn heaven). I originally planned the easy method (with just the ham slices)... but I ended up baking a pork loin that's not as equally easy as opening the package...but convenient enough as I used the baking method.
Pork loins are great meal extenders! One pack at $6 has two big portion cuts, so I usually cook one cut and reserve the other for another dish
Pork loin
salt
pepper
garlic powder
bread crumbs
Estimate Cost: $4-6 with salad (Serves 4-5)
STEP 1:
Place pork in bag and season well
STEP 2:
Arrange in baking pan. Drizzle with olive oil
STEP 3:
Bake for 30-45 minutes at 400 degrees
STEP 4:
Serve on top of salad
