Why am I awake at 6:30 AM on a Sunday? I slept at around 11PM last night and with our usual glass of wine..I should be sleeping like a log till 9am. But what am I doing here so wide awake banging the kitchen pantry doors? I didn't plan to cook today until I saw the skewer sticks (might as well eat in and save $50 for lunch at the chinese buffet).
The good thing about having an extra freezer (don't ask me why we have the giant sized version) in the garage is having the convenience and access to variety of food (since I buy in bulk to save cost). Grabbing half a pack of shrimp (costs $13/pack at Sams Club) and frozen pineapples -- - today will be a special kabob day!
shrimp (preferably deveined)
salt
pepper
herb seasoning (optional)
parsley
pineapple chunks
green pepper
olive oil
skewers
For Lima Beans:
ground beef
baby lima beans
beef seasoning
Estimate Cost: Approx $10-12 (serves 6)
STEP 1:
Season shrimp with salt, pepper and herb seasoning. For this recipe, I used a mixture of DASH and CREOLE herb seasoning we purchased from New Orleans
Step 2:
Place in skewers, alternately with pineapple and green pepper
Arrange in baking pan. Drizzle with olive oil and parsley
Broil in oven for 5 minutes at 450 degrees. Set aside
STEP 3:
While waiting for the shrimp, saute garlic and ground beef
STEP 4:
Add baby lima beans and season with beef seasoning
STEP 5:
Serve with rice. Enjoy!
