Time to get up for the Sunday newspaper! Soooooo sleepy! G1 and G2 were still in bed (I heard they stayed up late until 3 am) so G3 and I, in sunglasses and pillow hair stormed to the store. And of course....I just have to look at the meat market specials. But weird..either we were too early? or the butcher had a hangover that there are no specials on a Sunday?
No biggie - - I can use a pack of ground beef for a spaghetti meal this week...
Until I saw those big green bell peppers (and at $.66 cents each--not bad!) I have not planned our lunch menu yet. We'll get two! Its either I toss them in a beef stew or mix them with our polish sausage - -yum yum ! I just love the sweet and crunchy taste!
Once at home, I went ahead to check our garage freezer to see what cut of meat or sausage is available. But why bother defrosting when I have the ground meat now! So, hearing the sound of chopping board and knives being laid on top of the counter so early in the morning...Beignet must be thinking as he jumped behind me...What is she up to again? (He looked sleepy as he was playing with G1 and G2 at dawn). Yes, he's the kitchen police!
1lb ground beef
2 green peppers
onion
diced potatoes
1 tbsp olive oil
salt
pepper
parsley
pepper
2 eggs
mozzarella cheese
Estimate cost: $7 -8
STEP 1:
Cut green bell pepper into halves.
STEP 2:
Saute onion and ground meat
STEP 3:
Add potatoes. Season with salt and pepper
STEP 4:
In a small bowl, mix cooked meat with 2 eggs
STEP 5:
Place mixture inside pepper. Drizzle with olive oil
STEP 6:
Cook for 20 minutes at 375 degrees
STEP 7:
Top with mozzarella cheese and parsley
STEP 8:
Cook for another 5 minutes until medium brown
STEP 9:
Serve as appetizer or with rice
