When will the rain stop? We originally planned to do some practice driving for the girls but with the rain still pouring, we spent quality time dusting and vacuuming the entire morning!
Summer is almost here and with bikini season just around the corner, I need to ensure that we are all summer ready for our next vacation. So, I have reserved 2 hours court time at the gym (badminton game for the family) and as I took out our rackets (buried in the closet during winter season)...I am so gad we had a light lunch earlier!
Croquette is a great appetizer but can be served as a side dish or even as main entree. Today, I used left over salmon but like some of the cajun style cooking, you can use any fish of the season or even canned version. Here's how:
INGREDIENTS:
1-2 c cooked salmon
2 eggs
1/4 c chopped onion
1/2 c oat meal
salt
pepper
parsley
Estimate Cost: $4-$6
STEP 1:
Cut salmon into pieces. Mix in eg, onion, salt and pepper
STEP 2:
Form into balls and roll in flour
STEP 3:
Fry for 3-5 minutes in olive oil until golden brown
STEP 4:
Serve with honey mustard sauce
