This weekend, I plan to try some great tasting Spanish dishes! I have tons of cooking books stored above the kitchen cabinets (I forgot I even have them). When we were in Colorado Springs, we live 2 minutes across Broadmoore ( known for million dollar homes) and one weekend adventure I love is driving around the neighborhood during summer to see if the millionaires are tossing cookbooks/kitchen bowls for bargain hunters like me during their yard sale. Oh yes - -25 cents for cookbooks..Nice huh!
Anyway, I found a chicken with rice recipe (and I also checked online for variety) and added my own twist to make this yummy rice you will enjoy!
olive oil
1 lb chicken thigh (deboned)
1 tsp salt
1/2 tsp pepper
1 cup ham, chopped
2 cloves garlic, chopped
1/2 green bell pepper
1/2 can diced tomatoes, drained
1/2 can tomato paste
2 cups chicken stock
2 cups long grain rice
1 tsp thyme
parsley
Estimate Cost: $7 - $9 (Serves 5)
STEP 1: Season chicken with salt and pepper.Stir fry in olive oil for 8 minutes or until golden brown
STEP 2: Add garlic and onion
STEP 3: Add ham and chopped green bell pepper
STEP 4: Add tomatoes,tomato paste and chicken stock. Simmer for 3 minutes. Add rice and continue cooking for 20 minutes until rice is fully cooked. Add extra water as needed
STEP 5: Add parsley and thyme
STEP 6: Serve with MEAT LOAF
