Twins just wanna have fun this afternoon! Everything is within 10-15 minutes drive from our place - -so it's really not a big deal if they want to go to the library, the mall, blockbuster video, bookstore etc etc.....as long as I don't feel lazy, I can drop them off easily. This afternoon, they are meeting some friends at the bowling lane....(when will you get your license?)
... while waiting for their call back ...might as well cook some Spanish inspired snack - -beef empanada! When we were in Manila, the best place to get one is at GOLDILOCKS bakeshop (approx costs $1 per piece) and I remember purchasing a dozen at a time and will take them to work (together with caramel popcorn - Yum!). Wow..I missed those days - -I better call my sister in California and order some popcorn and bread hmmm...
INGREDIENTS:
1/2 lb ground beef
salt
pepper
steak seasoning (optional)
potatoes
green peas
Rolled Dough (store bought)ESTIMATE COST $3-$4
STEP 1: Saute ground beef until medium brown. Season with salt, pepper and seasoning.
STEP 2: Add potatoes and green peas. Cook for another 3 minutes
STEP 3: Roll dough and slice into 8. place a spoonful of mixture in each triangle. Fold the sides
STEP 4: Arrange in baking pan. Bake for 25 minutes at 350 degrees
STEP 5: Serve hot
