Then it started to rain.... I love this kind of weather! Makes me crave for hot chicken soup! So i decided to make a chicken potpie -- my comfy food for a rainy day like this
INGREDIENTS:
1 cup cooked chicken, cubed
1 cup mixed vegetables
1 can water chestnut
1 can condensed creamy chicken soup
rolled pastry dough (needs 2)
pepper
olive oilEstimate Cost: $4 $6
STEP 1: Saute chicken and mixed vegetables (I only green beans for this recipe) in olive oil for 3 minutes
STEP 2: Add chicken soup. season with pepper. Simmer for another 2 minutes.
STEP 3: Roll out first dough in pie pan and place mixture.
STEP 4: Cover with second dough. Create holes by pinching a fork around the pie (to allow steam to escape). Bake for 40 minutes at 375 degrees.
STEP 5: Let stand for 10 minutes before serving (and of course I can't wait, so it fell apart when I sliced it -- my tummy doesn't care)
