I am dying to try the recipe from my old french cookbook --and I am starting with the hot desserts . Flambeed bananas are easy to make and will add a touch of class to any dinner/party. The last one I had this was when I was traveling with my sister in Amsterdam. Since you are cooking with liquor -- be careful! However, do not extinguish flames -- the liquor will burn off naturally and leave a subtle flavor. Flambe' in french means flamed but IF you don't want to do the flaming routine, who cares - doesn't matter (you may also use kahlua for creamy flavor). Here's how:
INGREDIENTS:
2 bananas
2 tbsp butter
juice from 1/2 lemon
apricot puree or any preserves
2 tbsp sugar ( or honey)
1/4 cup cognac/rum
Whipped cream
Estimate Cost: < $ 2
STEP 1: In a skillet, heat butter, add bananas and brown well on both sides. Add lemon juice, preserves and sugar. Shake skillet.
STEP 2: Add liquor. Heat slowly. If you are entertaining, ignite and let flames burn down. (I did not light up the pan in this recipe)
STEP 3: Serve immediately with cold whipped cream
