We had a weekend getaway and arrived Monday afternoon. It's now Wednesday but amazing how one day got me clogged up at work (and my blog ) and I am still trying to get my ducks in a row. Of course , the beauty of a short trip - buffet here and buffet there - so this week I am giving my bento box a rest and I am only feasting on yogurt, snack bars and cereals for lunch.
I have a lot of "personal to do list" and I only got through half of it (i.e. schedule dentist/optometrist, cleaners, bank etc). So busy on so many small details at work that I wasn't able to check on yahoo finance until 6pm today . Yes - - my favorite stock is at $47.94 per share today (+0.41 cents) hopefully, it will continue to stride upwards.
Good thing, the family is not hungry today so I have the luxury of turning an appetizer as the main dish (also because I need to do some fresh food shopping as part of my list). Here's an easy hors d'oeuvres that is a hit among friends. Tonight, there's no structure - - I'll heat pasta, bread and we're good to go.
INGREDIENTS:
- 2 links polish sausage
- green bell pepper
- onion
- olive oil
- basil leaves
Estimate Cost: $4-6
STEP 1: Stir fry sausage for 5 minutes. Add green bell pepper, basil leaves and onion. Cook for another 3 minutes
While cooking, bake bread for 5-10 minutes at 350 degrees
Serve on the side or as topping to your pasta (add pesto or sundried tomatoes)
OR as topping to your cheese and crackers
