We planned to have a back to back Lara Croft afternoon but unfortunately Dr D hubby's beeper got in the way. A blessing in disguise as I need to start my day! So while he's away - - I am entertaining myself in the kitchen (again!)
We love paella but one or two of my picky eaters doesn't agree with my full blown ingredients (i.e. clams, mussels and green peas).
Creating paella takes time and lots of energy stirring if you will start with uncooked rice. What I do is cook the rice halfway in a rice cooker and toss it when it's almost done.
1 lb chicken
1/2 onion
1 cup sausage
1 green bell pepper
1 cup shrimp
1 can tomato paste
1 can diced tomatoes, drained
2 cup chicken stock
salt
pepper
2 tsp paprika, saffron threads
olive oil
3 cups cooked riceEstimate Cost: $8-$12
STEP 1: Season chicken with salt and pepper. Fry in oil until golden brown. Set aside. Add onion, sausage and green bell pepper. Cook for 3 minutes
STEP 2: Add tomatoes, tomato paste, shrimp, chicken stock, paprika and saffron threads. Cook for another 3 minutes
STEP 3: Stir in rice. Cook for another 3 minutes. Add water as needed
STEP 4: Serve with lemon and boiled egg on the side
