Today is a slow work day for a Wednesday. I'm looking at my calendar and I find it weird that I only have one meeting (strategy session) and an hour of conference call? Hmmm..usually I have back to back meetings till 5pm. Oh well, enjoy it while it lasts, so I met Dr D hubby and the teens for a late Chinese buffet lunch - - hence - -we are not having the usual full blown dinner tonight
But I know their tummies too well that by 7pm someone will complain that there's no food. Nice - I have a reason to check off one Batali antipasto list .. Focaccia bread anyone?
Again, I am not a chef (I live and breathe in a fast paced corporate environment) - -but it's really fun wearing the jacket and the crocs with our wannabe Italian accents as we beat and punch this dough to death along while shouting (AAY - -Bartoli!).

DAY 3:
Maria Belinda's version
1 1/2 cup warm water
1 tbsp active dry yeast
1 tsp salt
1 tsp sugar
4 cups all purpose flour
1/4 cup extra virgin olive oil
1 cup grated parmigianno - regianno
1/4 cup mozzarella (teens love this - sorry chef batali)
1 1/2 tbsp dried rosemary
pinch of coarse sea salt
STEP 1: Dissolve yeast in warm water until foamy. Add salt and sugar. Stir
STEP 2: Add flour and olive oil. Mix well with hands
STEP 3: Transfer ball to clean work surface (dust with flour) and knead.....punch...shout in italian accent (yay Bartoli!) .....until dough is smooth.
STEP 4: Place dough in lightly oiled bowl. Cover for 2 hours
...check food buzz and say hello to new friends, check facebook, surf on next episode for Hell's Kitchen (What? Ramsey is not on tonight - -donkey !!!!). After 2 hours, cross your fingers that dough has risen... AWESOME!
STEP 5: Punch , Punch and Punch again (this dough has issues huh?). Divide into two. Place in separate bowls. Cover and wait for another 30 minutes.
STEP 6: Preheat oven to 450 degrees. Oil two baking sheets. Place each piece of dough. Using rolling pin, flatten to fit in the sheet. Poke to make indention using your fingers. Sprinkle with cheese, drizzle olive oil, rosemary and salt.
STEP 7: Bake for 13- 15 minutes. Serve warm













Thanks for the kind words Alice Q. I concur, and therefore, the menu items that were off would not deter my patronage. Thanks for taking the time out to write it! I think spirituality is really important too, we certainly agree on that point. A leader without spirituality is missing a key element.
