This is my first dinner with Molto Mario! The only change I made was substituting pancetta with sweet ham. Pancetta is a type of dry, cured meat. This reminds me of ham slices we use to purchase for Christmas in Manila.
Despite the sustitution I made, overall this dish turned out well. This reminds me of a traditional chicken cacciatore dish, but what makes it truly different and special is the combination of rosemary, garlic and wine in the sauce. This is a must try!

DAY 1:
Maria Belinda's version:
2 cloves garlic, minced
2 tbsp dried rosemary
salt and black pepper
1/2 cup extra virgin olive oil
1 large yellow onion chopped
1 cup mushroom
1 cup ham
4 ribs celery
1 cup white wine
1 cup chicken stock (store bought)
1 cup tomato sauce (store bought)
pinch of sugar
pinch of red pepper flakesESTIMATE COST: $9-$11
STEP 1: Season chicken with garlic, rosemary, salt and pepper, olive oil. Set aside for 30 minutes. Sear the chicken in olive oil until golden brown. Transfer chicken to a plate.
STEP 2: Add onion, mushroom, ham and celery and cook until onions are golden brown
STEP 3: Add tomato sauce and chicken broth. Cook for another 20 minutes
STEP 4: Serve with rice or steamed carrots
