Lazy Sunday! As expected, I woke up at 7am and I didn't win the lottery. Time to clean up my refrigerator, so I am making a different version of FRITATA WITH SPINACH AND CHEESE: Frittata di Spinaci e Cacio where I combine veggies, herbs and left over spinach.
Too bad the cat is sleeping today as I wanted to show him the whole chicken (bigger than him) we've prepared for lunch.

It is imperative that you season the inside of the chicken well. In the recipe, Mario recommended to brush the chicken with a spicy oil (combination of olive oil, jalapenos and red pepper flakes heated in the oven) but I took this out of the mix and served it on the side instead.
1 whole chicken, rinsed and patted dry
1/4 cup black pepper
6 tbsp extra virgin olive oil
2 tbsp dijon mustard
1/2 cup chopped italian parsley
2 tomatoes
1 tbsp balsamic vinegar

That takes some work. There's really no need for a bib when you're munching on blue crabs in Baltimore, but I see why you need one for these.
